Equipment

  • 1 Medium saucepan
  • 2 Wooden spoon or spatula
  • 3 Measuring cups and spoons

Ingredients

  • 1 2 cups mixed berries (fresh or frozen – strawberries, blueberries, raspberries, blackberries)
  • 2 1/4 cup granulated sugar (adjust to taste)
  • 3 1/4 cup water
  • 4 1 tablespoon lemon juice (optional, for brightness)
  • 5 1  teaspoon cornstarch + 2 tablespoons water (for thickening, optional)

Instructions

  • Prepare the Berries:If using fresh berries, rinse and hull them. If using frozen berries, no need to thaw.
  • Cook the Berries:In a medium saucepan, combine the berries, sugar, water, and lemon juice. Stir well and bring to a gentle simmer over medium heat.
  • Thicken the Sauce (Optional):If you prefer a thicker sauce, mix the cornstarch with 2 tablespoons of water in a small bowl until smooth. Stir the cornstarch mixture into the simmering berries. Cook for 2-3 minutes, stirring frequently, until the sauce thickens.
  • Mash or Blend (Optional):For a smoother sauce, use a potato masher to gently crush the berries while cooking. Alternatively, transfer the sauce to a blender and blend until smooth. For a chunkier sauce, leave it as is.
  • Cool and Serve:Remove the sauce from heat and let it cool slightly. Serve warm or store in an airtight container in the refrigerator for up to 1 week.

Notes

  • Sweetness: Adjust the sugar based on the sweetness of your berries and your preference.
  • Storage: Store in the fridge for up to 1 week or freeze for up to 3 months.
  • Uses: Great on pancakes, waffles, ice cream, cheesecake, yogurt, or oatmeal.
